Bean with Bacon Soup

Ingredients 1 (16 oz) package dried Navy (or Great Northern) beans 9 C water 1 lb bacon 2 onions, chopped 2 stalks celery, chopped 4 tsp chicken bouillon 1 bay leaf 1⁄3 tsp salt ¼ tsp ground black pepper 1⁄8 tsp ground cloves 1 (16 oz) can diced tomatoes 4 C water Instructions Boil the beans in 9 C water, let sit for one hour. Drain and set aside.

Black Bean Soup

Ingredients 5 slices of bacon, finely chopped ½ cup chopped onion 3 cloves garlic, minced 4 (15.25 oz) cans of black beans, drained 2 (14 oz) cans chicken broth 1 tsp ground cumin 1 tsp chili powder toppings for serving (optional): sour cream tortilla strips or chips, and cheddar cheese Instructions Cook bacon over me-high heat for 3 minutes, or until just beginning to brown. Add onions and garlic and cook until onion is tender.

Campfire Sausage and Potato Soup

Ingredients 1 can (15 ½ oz) black beans, rinsed and drained 1 can (14 ½ oz) diced tomatoes, undrained 1 can (10 ½ oz) condensed beef (or chicken) broth, undiluted 8 oz kielbasa sausage, cut lengthwise into halves, then crosswise into ½-inch pieces 1 large baking potato, cut into ½-inch cubes 1 medium green (or red) bell pepper 1 medium onion, diced 1 tsp dried oregano leaves ½ tsp sugar 1-2 tsp ground cumin Instructions Combine all ingredients, except cumin, in slow cooker.

Cheeseburger Soup

Ingredients 1⁄2 lb hamburger, browned 3⁄4 cup shredded carrots 1 tsp dried basil 3 cups chicken broth 1⁄4 cup flour 1 1⁄2 cup milk pepper 3⁄4 cup onion chopped 3⁄4 cup celery diced 1 tsp dried parsley 4 cups potatoes, diced 8 oz Velveeta cubed 3⁄4 tsp salt 1⁄4 cup sour cream (optional) Instructions Brown beef in 3 quart saucepan; drain and set aside. In the same saucepan saute onion, carrots, celery, basil, and parsley in 1 Tbsp butter until tender (about 10 minutes).

Clam Chowder

Ingredients 1 cup onion, chopped 4 cup potatoes, diced 1⁄2 cup butter (or less) 1 can condensed milk 1 cup celery, diced 1 can clams, undrained 1⁄2 cup flour salt and pepper to taste Instructions Cook veggies until tender just enough water to cover. Make thickening of milk and flour. Add to rest. Cook until thick. Add clams and heat through.

Creamy Chicken and Noodles

Ingredients 11 cups water 8 tsp chicken bullion ½ tsp poultry seasoning 1 tsp onion or garlic salt 1 (16 oz) package wide egg noodles 3 cooked chicken breasts, cut into chunks 1 package frozen, mixed vegetables 2 cans cream of chicken soup 1 cup sour cream Instructions Bring chicken broth to a boil and add noodles, poultry seasoning, and onion salt. Cook noodles in broth for 6-8 minutes until tender.

Hearty Sausage Soup

Ingredients 1 lb turkey or chicken sausage 1 medium onion, diced 2 garlic cloves, minced 2 large carrots, diced 1 large red potato, diced 2 tsp Italian seasonings 2 cans (14 oz) chicken stock 1 can (14 oz) Italian style diced tomatoes 1 can (14 oz) white beans, undrained Instructions Saute onions and garlic with sausage until browned. Add carrots, potatoes, and seasoning and cook 3 minutes. Add remaining ingredients and bring to a boil.

Slow Cooker Split Pea Soup

Ingredients 1 (16 oz) package dried green split peas, rinsed and sorted 1 meaty ham bone, 2 ham hocks, or 2 cups diced ham 3 carrots, peeled and sliced ½ cup chopped onion 2 ribs of celery, plus leaves, chopped 1 or 2 cloves garlic, minced 1 bay leaf ¼ cup fresh parsley, chopped, or 2 tsp dried parsley flakes 1 Tbps seasoned salt (or to taste) ½ tsp fresh pepper 1 ½ quarts hot water Instructions Layer ingredients in slow cooker in the order given; pour in water.

Taco Soup

Ingredients 1 lb hamburger 1 can pinto beans 1 can kidney beans 1 can black beans 1 can corn 1 can tomatoes 1 pkg taco seasoning Instructions Brown hamburger. Combine all ingredients in large pan and simmer. Serve with tortilla chips.

Tortellini Soup

Ingredients 1 can chicken broth 1 can cream of chicken soup 4 cups cubed cooked chicken 2 cloves minced garlic 1 cup chopped onion 2 cups sliced carrots 2 cups water 1 (7-9 oz) pkg. cheese tortellini 1 (9 oz) pkg cut broccoli or 1 bunch fresh ½ tsp basil ½ tsp oregano Instructions Combine everything except broccoli. Simmer until carrots and tortellini are tender. Add broccoli and cook until tender.

White Bean Chicken Chili

Ingredients 2 chicken breasts (cooked and diced) 1 Tbsp oil 1 onion, chopped 2 cloves garlic, chopped 1 tsp cumin ½ tsp chili powder ¼ to ½ tsp pepper 3 cans Northern White Beans (undrained) 1 can Garbanzo Beans (drained) 1 can white corn (undrained) 2 cans (4 oz) chopped green chilies 2 chicken bullion cubes dissolved into 2 ½ Cups water Instructions Boil and chop chicken breasts.

Zuppa Toscana

Ingredients 1 lb Italian Sausage 4 Tbsp crumbled bacon pieces 2 large russet potatoes, thinly sliced 1 large onion, chopped 3 cloves garlic, minced 8 C chicken broth 2 C water 1 C half and half 3 C kale, chopped salt and pepper Instructions Brown sausage then cook bacon until crisp. Meanwhile, cut potatoes in thin slices then quarter the slices. Chop onions and mince garlic. Break bacon into bits, add onions and garlic and saute, stirring frequently until onions are transparent.
