Campfire Sausage and Potato Soup

No campfire necessary.

Ingredients

  • 1 can (15 ½ oz) black beans, rinsed and drained
  • 1 can (14 ½ oz) diced tomatoes, undrained
  • 1 can (10 ½ oz) condensed beef (or chicken) broth, undiluted
  • 8 oz kielbasa sausage, cut lengthwise into halves, then crosswise into ½-inch pieces
  • 1 large baking potato, cut into ½-inch cubes
  • 1 medium green (or red) bell pepper
  • 1 medium onion, diced
  • 1 tsp dried oregano leaves
  • ½ tsp sugar
  • 1-2 tsp ground cumin

Instructions

Combine all ingredients, except cumin, in slow cooker. Cover and cook on LOW 8 hours or on HIGH 4 hours. Stir in cumin and serve.
