Zuppa Toscana

Better than Olive Garden.

Ingredients

  • 1 lb Italian Sausage
  • 4 Tbsp crumbled bacon pieces
  • 2 large russet potatoes, thinly sliced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 8 C chicken broth
  • 2 C water
  • 1 C half and half
  • 3 C kale, chopped
  • salt and pepper

Instructions

Brown sausage then cook bacon until crisp.

Meanwhile, cut potatoes in thin slices then quarter the slices. Chop onions and mince garlic.

Break bacon into bits, add onions and garlic and saute, stirring frequently until onions are transparent. Put in soup pot and add broth and water. Add potatoes and bring to a boil. Reduce heat and simmer until potoates are cooked through, about 10 minutes.

While potatoes are cooking, wash kale and roughly chop into small pieces.

Once potatoes are cooked, add the half and half and Italian sausage and cook until soup is heated through. Add kale. Remove from heat and serve.
