Bean and Spinach Burritos

Avocado Relish 1 large avocado, finely diced 2 Tbsp fresh lime juice ¾ cup tomato, finely chopped and seeded ½ cup green onion, minced 1⁄3 cup cilantro, minced ½–1 tsp hot pepper sauce Combine avocado and lime juice in bowl and toss. Add tomato, onions, cilantro, and hot sauce; toss gently. Cover and refrigerate 1 hour. Serve at room temperature. Burritos 2 tsp olive oil 1 cup finely chopped onion 2 cloves garlic, minced 2 cans (15 oz) black beans, drained 1 can (10 oz) whole tomatoes with green chilies, undrained 2 tsp ground cumin ½ tsp ground oregano 8 flour tortillas (8 inch) spinach leaves 2 cups shredded Monterey Jack cheese sour cream (optional) Cook and stir onion and garlic 5 minutes, or until tender.

Bean with Bacon Soup

Ingredients 1 (16 oz) package dried Navy (or Great Northern) beans 9 C water 1 lb bacon 2 onions, chopped 2 stalks celery, chopped 4 tsp chicken bouillon 1 bay leaf 1⁄3 tsp salt ¼ tsp ground black pepper 1⁄8 tsp ground cloves 1 (16 oz) can diced tomatoes 4 C water Instructions Boil the beans in 9 C water, let sit for one hour. Drain and set aside.

Black Bean Burgers

Ingredients 2 slices stale or toasted whole wheat sandwich bread 1 medium onion, chopped 2 cloves garlic, minced 1 jalapeño pepper, minced (membranes and seeds removed) 1 tsp cumin 1 (15 oz) can black beans (drained and rinsed) 1 ¼ cups cooked brown rice 2 tsp fresh lime juice ½ tsp salt ½ tsp pepper whole wheat bread or breadcrumbs ¼ cup chopped cilantro Serve with buns, avocado, tomato, cotija cheese (optional), and cilantro-lime mayo (optional).

Black Bean Soup

Ingredients 5 slices of bacon, finely chopped ½ cup chopped onion 3 cloves garlic, minced 4 (15.25 oz) cans of black beans, drained 2 (14 oz) cans chicken broth 1 tsp ground cumin 1 tsp chili powder toppings for serving (optional): sour cream tortilla strips or chips, and cheddar cheese Instructions Cook bacon over me-high heat for 3 minutes, or until just beginning to brown. Add onions and garlic and cook until onion is tender.

Cowboy Beans

Ingredients 1 pound lean ground beef 1⁄2 cup chopped onion 1 green pepper, chopped, or mixture of green and red bell pepper 3 cans beans, drained and rinsed (pinto, great northern, and kidney or your choice) 1⁄2 cup brown sugar 2 tbsp. prepared mustard 2 tbsp. Worcestershire sauce 1 1⁄2 cups ketchup Instructions In a large skillet over medium heat, brown the ground beef with onion and green pepper. Add beef mixture to crockpot with the remaining ingredients.

Crockpot Chicken with black beans and cream cheese

Ingredients 4-5 boneless chicken breasts, frozen 1 (15.5 oz) can black beans, drained 1 (15oz) can corn, drained 1(15oz) jar salsa 1(8oz) pkg cream cheese Instructions Put chicken breasts (frozen) into crockpot. Add black beans, corn, and salsa to cover chicken. Cook on high for 4-5 hours or until chicken is fully cooked, stirring occasionally. Add cream cheese in chunks on top and cook for another 1⁄2 hour.

Dulcie's Rice and Beans

Ingredients ½ cup tomato sauce ½ cup sulfrico ½ cup oil 2 cans Pinto beans Instructions Combine tomato sauce, sulfrico, and oil and cook until mixed. Add beans and cook simmer until flavors are combined. Serve with rice.

Hearty Sausage Soup

Ingredients 1 lb turkey or chicken sausage 1 medium onion, diced 2 garlic cloves, minced 2 large carrots, diced 1 large red potato, diced 2 tsp Italian seasonings 2 cans (14 oz) chicken stock 1 can (14 oz) Italian style diced tomatoes 1 can (14 oz) white beans, undrained Instructions Saute onions and garlic with sausage until browned. Add carrots, potatoes, and seasoning and cook 3 minutes. Add remaining ingredients and bring to a boil.

Red Chicken Enchiladas

Ingredients 2 chicken breasts homemade enchilada sauce small onion 1 (4 oz) can diced chilies black beans flour tortillas cheese Instructions Make enchilada sauce. Saute onions and chilies. Add cooked chicken. Spread enchilada sauce on tortilla. Layer black beans, chicken mixture, and cheese. Roll up and place in baking dish. Top with leftover enchilada sauce and cheese.

Taco Soup

Ingredients 1 lb hamburger 1 can pinto beans 1 can kidney beans 1 can black beans 1 can corn 1 can tomatoes 1 pkg taco seasoning Instructions Brown hamburger. Combine all ingredients in large pan and simmer. Serve with tortilla chips.

White Bean Chicken Chili

Ingredients 2 chicken breasts (cooked and diced) 1 Tbsp oil 1 onion, chopped 2 cloves garlic, chopped 1 tsp cumin ½ tsp chili powder ¼ to ½ tsp pepper 3 cans Northern White Beans (undrained) 1 can Garbanzo Beans (drained) 1 can white corn (undrained) 2 cans (4 oz) chopped green chilies 2 chicken bullion cubes dissolved into 2 ½ Cups water Instructions Boil and chop chicken breasts.
