Bean with Bacon Soup

Ingredients 3 cups rice, cooked 5-6 slices bacon, optional ½ lb ham 1 clove garlic 3 stalks celery, diced 2 diced green onions other vegetables (peas and carrots, etc) 3 eggs 2 Tbsp oil 2 Tbsp soy sauce Instructions Make rice. Zuppa Toscana

Ingredients 1 lb Italian Sausage 4 Tbsp crumbled bacon pieces 2 large russet potatoes, thinly sliced 1 large onion, chopped 3 cloves garlic, minced 8 C chicken broth 2 C water 1 C half and half 3 C kale, chopped salt and pepper Instructions Brown sausage then cook bacon until crisp. Meanwhile, cut potatoes in thin slices then quarter the slices. Chop onions and mince garlic. Break bacon into bits, add onions and garlic and saute, stirring frequently until onions are transparent.
