Campfire Sausage and Potato Soup

Ingredients 1 can (15 ½ oz) black beans, rinsed and drained 1 can (14 ½ oz) diced tomatoes, undrained 1 can (10 ½ oz) condensed beef (or chicken) broth, undiluted 8 oz kielbasa sausage, cut lengthwise into halves, then crosswise into ½-inch pieces 1 large baking potato, cut into ½-inch cubes 1 medium green (or red) bell pepper 1 medium onion, diced 1 tsp dried oregano leaves ½ tsp sugar 1-2 tsp ground cumin Instructions Combine all ingredients, except cumin, in slow cooker.

Grandma Wood's Potato Salad

Ingredients 5-6 new potatoes, boiled until barely done 4-5 hard boiled eggs, diced ½ cucumber, chopped 1 small bunch green onions, chopped Instructions Combine ingredients and sprinkle with 2 Tbsp sugar, salt, and pepper. Let sit for 10 minutes while preparing dressing. Dressing: 1 cup Miracle Whip ½ cup mayonnaise 3 Tbsp canned milk Pour over potato mixture and toss. Best if served within one hour.

Zuppa Toscana

Ingredients 1 lb Italian Sausage 4 Tbsp crumbled bacon pieces 2 large russet potatoes, thinly sliced 1 large onion, chopped 3 cloves garlic, minced 8 C chicken broth 2 C water 1 C half and half 3 C kale, chopped salt and pepper Instructions Brown sausage then cook bacon until crisp. Meanwhile, cut potatoes in thin slices then quarter the slices. Chop onions and mince garlic. Break bacon into bits, add onions and garlic and saute, stirring frequently until onions are transparent.
