Strawberry Rhubarb Jam

- 5 cups rhubarb, cut into ½ inch cubes
- 2 Cups hulled and halved strawberries
- 2 ¼ Cup sugar
- 1 Tbsp fresh lemon juice
Instructions
- Combine all ingredients in saucepan over medium heat. Once mixture starts to bubble, reduce heat to medium low. Continue to cook, stirring occasionally until the jam has thickened. It should take about an hour, temperature should be over 205 degrees F. Process in water bath for 10 minutes.
