Sourdough Banana Bread

  • 2 very ripe bananas
  • ¾ Cup brown sugar
  • ½ C sourdough starter, fed and active
  • 2 eggs
  • 3 Tbsp olive oil
  • 3 Tbsp melted butter
  • 2 tsp vanilla extract
  • Grated lemon zest from ½ medium lemon
  • 1 1/8 C all purpose flour
  • 1 1/5 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ½ tsp salt
  • ¼ tsp baking soda

Instructions

  1. Preheat oven to 350. Butter and flour metal loaf pan.
  2. Melt butter.
  3. Mash bananas.
  4. To the mashed bananas, whisk in brown sugar, sourdough starter, eggs, olive oil, melted butter, vanilla, and lemon zest. Whisk well to combine.
  5. In a second mixing bowl, whisk together the flour, baking powder, cinnamon, ginger, salt, and baking soda.
  6. Add the dry ingredients to the wet ingredients and mix to just barely combine.
  7. Pour the batter in the prepared loaf pan.
  8. Bake at 350 for 55-65 minutes, or until the top of the bread is golden and a toothpick inserted into the center comes out clean.
  9. Cool in the pan.
