Sourdough Banana Bread

- 2 very ripe bananas
- ¾ Cup brown sugar
- ½ C sourdough starter, fed and active
- 2 eggs
- 3 Tbsp olive oil
- 3 Tbsp melted butter
- 2 tsp vanilla extract
- Grated lemon zest from ½ medium lemon
- 1 1/8 C all purpose flour
- 1 1/5 tsp baking powder
- 1 tsp ground cinnamon
- ½ tsp ground ginger
- ½ tsp salt
- ¼ tsp baking soda
Instructions
- Preheat oven to 350. Butter and flour metal loaf pan.
- Melt butter.
- Mash bananas.
- To the mashed bananas, whisk in brown sugar, sourdough starter, eggs, olive oil, melted butter, vanilla, and lemon zest. Whisk well to combine.
- In a second mixing bowl, whisk together the flour, baking powder, cinnamon, ginger, salt, and baking soda.
- Add the dry ingredients to the wet ingredients and mix to just barely combine.
- Pour the batter in the prepared loaf pan.
- Bake at 350 for 55-65 minutes, or until the top of the bread is golden and a toothpick inserted into the center comes out clean.
- Cool in the pan.
