Quinoa Bowls
It’s bascially just a rice bowl.
Ingredients
BBQ Chicken
- 5 chicken breasts
- 2 C BBQ sauce
- 2 Tbsp Worcestershire sauce
- ½ C Zesty Italian Dressing
- ¼ C brown sugar
Coconut Lime Quinoa
- 1 C quinoa
- 2 C water
- 2 tsp chicken bullion granules
- 1 lime
- 1 tsp coconut oil
- 2-3 Tbsp fresh cilantro, chopped
Toppings
- Red onion
- corn
- black beans
- cheese
- cilantro
- lime
- avocado
- red pepper
- flavored tortilla chips
Instructions
- Place chicken in slow cooker. In a separate bowl mix BBQ sauce, Worcestershire sauce, Italian dressing, and brown sugar. Pour BBQ mixture over the chicken. Cover and cook on low for 7 hours or on high for 4.
- Shred chicken with two forks and allow it to cook for an additional 30 minutes.
- To make the quinoa, place the quinoa, water, bullion, and the zest of a lime in a medium sauce pan. Bring to a boil. Reduce heat to medium low and cook for 12-15 minutes or until the quinoa is tender. Fluff with a fork and add the coconut oil, fresh cilantro, and about 2 Tbsp lime juice. Stir to combine.
- Serve quinoa with BBQ chicken and desired toppings.
