Pumpkin Roll
Tasty fall treat.
Ingredients
- 3 eggs
- 1 cup sugar
- 2/3 cup pumpkin
- 1 t baking powder
- 2 t cinnamon
- 1/2 t salt
- 1 t lemon juice
- 1 t ginger
- 3/4 cup flour
- 1/2 t nutmeg
Instructions
- Beat eggs for 5 min on high.
- Beat sugar in gradually.
- Stir in pumpkin.
- Spread on parchment 15x10" pan
- Bake @ 375 for 15 min
- Turn out on towel and sprinkle with powdered sugar.
- Roll while warm.
Filling Ingredients
- 1 cup powdered sugar
- 6 oz cream cheese
- 4 T butter
- 1/2 t vanilla
Filling Instructions
- Beat and spread on roll.
- Reroll and chill.
