Dry Ingredients

  • 4.5 cup all purpose flour *You can use cake flour or all purpose flour. Both work for this recipe.
  • 2/3 cup sugar
  • 1.5 tsp salt
  • 1 tbsp baking powder
  • 4 tsp baking soda

Wet Ingredients

  • 2 cup whole milk
  • 1/2 cup vegetable oil
  • 1 tbsp pure vanilla extract
  • 1/2 cup apple cider vinegar
  • 1/2 cup sour cream
  • 4 eggs

Instructions

  1. Preheat griddle to 375° F. For most griddles, this will be the low to medium-low setting for about 10-15 minutes.

  2. While griddle is heating, sift flour into a medium bowl. Add the other dry ingredients to the bowl and mix together well.

  3. In a separate large bowl, add all wet ingredients and mix well.

  4. Add the mixed dry ingredients to the wet ingredients. Gently fold together, taking care to not over-mix the batter (lumps are fine). Once the dry ingredients are mixed in, allow the batter to rest for about 5 minutes. The batter should appear thick and bubbly.

  5. Add about 1-2 tablespoons of butter to the warm griddle and use your spatula to spread it around.

  6. Gently spoon the pancake batter onto the griddle, making sure to leave enough space in between each pancake to flip. Do NOT mix the batter again as you’re spooning out.

  7. Allow the pancakes to cook on the first side until bubbles appear and the edges set up (about 4 minutes depending on what griddle you are using). Then, flip pancakes to the second side and continue to cook until done (about 2 minutes). Take off the heat and serve warm.
