Dry Ingredients
- 4.5 cup all purpose flour *You can use cake flour or all purpose flour. Both work for this recipe.
- 2/3 cup sugar
- 1.5 tsp salt
- 1 tbsp baking powder
- 4 tsp baking soda
Wet Ingredients
- 2 cup whole milk
- 1/2 cup vegetable oil
- 1 tbsp pure vanilla extract
- 1/2 cup apple cider vinegar
- 1/2 cup sour cream
- 4 eggs
Instructions
-
Preheat griddle to 375° F. For most griddles, this will be the low to medium-low setting for about 10-15 minutes.
-
While griddle is heating, sift flour into a medium bowl. Add the other dry ingredients to the bowl and mix together well.
-
In a separate large bowl, add all wet ingredients and mix well.
-
Add the mixed dry ingredients to the wet ingredients. Gently fold together, taking care to not over-mix the batter (lumps are fine). Once the dry ingredients are mixed in, allow the batter to rest for about 5 minutes. The batter should appear thick and bubbly.
-
Add about 1-2 tablespoons of butter to the warm griddle and use your spatula to spread it around.
-
Gently spoon the pancake batter onto the griddle, making sure to leave enough space in between each pancake to flip. Do NOT mix the batter again as you’re spooning out.
-
Allow the pancakes to cook on the first side until bubbles appear and the edges set up (about 4 minutes depending on what griddle you are using). Then, flip pancakes to the second side and continue to cook until done (about 2 minutes). Take off the heat and serve warm.
