Olive's Salsa

Summary

Ingredients

  • 8 C tomatoes (peeled, chopped, and drained)
  • 2 ½ C onion, chopped
  • 1 ½ C green peppers, chopped
  • ½ C jalapeno peppers, chopped
  • 6 garlic cloves
  • ¼ C fresh cilantro, chopped
  • 2 ½ tsp cumin
  • 2 tsp black pepper
  • 1/8 tsp canning salt
  • 1/3 C vinegar
  • 2 (8oz) cans tomato sauce
  • 2 (6oz) cans tomato paste

Instructions

  1. Mix all ingredients except cilantro in a 6 qt pan and bring to a slow boil for 8 minutes. Add cilantro and cook for 2 more minutes.
  2. Fill canning jars. Put on lids and finger tighten rings. Cook in hot water bath for 10 minutes.
  3. Yields about 7 pints.
