Olive's Salsa
Summary
Ingredients
- 8 C tomatoes (peeled, chopped, and drained)
- 2 ½ C onion, chopped
- 1 ½ C green peppers, chopped
- ½ C jalapeno peppers, chopped
- 6 garlic cloves
- ¼ C fresh cilantro, chopped
- 2 ½ tsp cumin
- 2 tsp black pepper
- 1/8 tsp canning salt
- 1/3 C vinegar
- 2 (8oz) cans tomato sauce
- 2 (6oz) cans tomato paste
Instructions
- Mix all ingredients except cilantro in a 6 qt pan and bring to a slow boil for 8 minutes. Add cilantro and cook for 2 more minutes.
- Fill canning jars. Put on lids and finger tighten rings. Cook in hot water bath for 10 minutes.
- Yields about 7 pints.
