Mushroom Pasta
Chili from the Kimber home.
Ingredients
- 16 oz cremini mushrooms
- 2 scallions
- 16 oz Cavatappi Pasta
- 2 Tbsp butter
- 2 Tbsp flour
- 13.5 oz milk
- 4 Tbsp cream cheese
- garlic bread seasoning
- 1/2 C parmesan cheese
Instructions
- Bring a large pot of water to a boil.
- Trim and slice mushrooms.
- Trim and slice scallions.
- Heat large drizzle of olive oil in pan and heat mushrooms over medium heat. Season with salt and pepper an cook, stirring occasionally until browned and slightly crispy, about 5-7 minutes.
- Transfer to a paper-towel lined paper plate.
- Once water is boiling, cook cavatappi. Reserve 1 C water.
- While pasta cooks, heat 2 Tbsp butter over medium-high heat. Add scallion whites and cook. Add 2T flour and cook until lightly browned, about 1-2 minutes.
- Whisk in milk and 1/3 C of reserved pasta cooking water.
- Simmer until slightly thickened, about 3-4 minutes.
- Stir in Cream cheese until melted.
- Stir in mushrooms and drained pasta. Add garlic bread seasoning and salt and pepper to taste.
