Mushroom Pasta

Chili from the Kimber home.

Ingredients

  • 16 oz cremini mushrooms
  • 2 scallions
  • 16 oz Cavatappi Pasta
  • 2 Tbsp butter
  • 2 Tbsp flour
  • 13.5 oz milk
  • 4 Tbsp cream cheese
  • garlic bread seasoning
  • 1/2 C parmesan cheese

Instructions

  1. Bring a large pot of water to a boil.
  2. Trim and slice mushrooms.
  3. Trim and slice scallions.
  4. Heat large drizzle of olive oil in pan and heat mushrooms over medium heat. Season with salt and pepper an cook, stirring occasionally until browned and slightly crispy, about 5-7 minutes.
  5. Transfer to a paper-towel lined paper plate.
  6. Once water is boiling, cook cavatappi. Reserve 1 C water.
  7. While pasta cooks, heat 2 Tbsp butter over medium-high heat. Add scallion whites and cook. Add 2T flour and cook until lightly browned, about 1-2 minutes.
  8. Whisk in milk and 1/3 C of reserved pasta cooking water.
  9. Simmer until slightly thickened, about 3-4 minutes.
  10. Stir in Cream cheese until melted.
  11. Stir in mushrooms and drained pasta. Add garlic bread seasoning and salt and pepper to taste.
