Israeli Couscous

Ingredients

  • 1/3 C Pine nuts
  • 2 Tbsp butter
  • 1/3 finely chopped onions
  • 1 ½ C (8oz) Israeli Couscous
  • 1 small cinnamon stick
  • 1 dried bay leaf
  • 1 ¾ C chicken broth
  • ½ salt
  • ¼ C minced fresh parsley

Instructions

  1. Preheat medium saucepan over medium high heat and add butter. Saute until onions are golden brown (5-6 minutes). Add couscous, cinnamon stick, and bay leaf. Cook until couscous is beginning to brown, stirring frequently (about 5 minutes). Add chicken broth and salt. Bring the mixture to a boil, then reduce heat to low. Cover and simmer until couscous is tender and the liquid is absorbed, 10-12 min.
  2. Stir in parsley and pine nuts.
