Instant Pot Orange Chicken

Ingredients
- 2 lbs chicken breast, cut into 1-2 inch pieces
- 2 Tbsp olive oil
- 2 Tbsp cornstarch
- 2 Tbsp orange juice
- Green onions, optional for topping
- Rice
Sauce
- 1 C orange juice
- 1 Tbsp ginger, grated
- 6 cloves garlic, minced
- 1 Tbsp rice vinegar
- ¼ C white sugar
- ¼ C brown sugar
- ¼ C soy sauce
- Zest from 1 orange
Instructions
- Cut chicken breast into 1-2 inch chunks. Set Instant Pot to Saute and add oil. Saute chicken chunks. Add sauce ingredients to small bowl and mix. Add sauce to instant pot. Stir gently until chicken is coated in sauce. Place lid on instant pot and seal. Cook on high pressure for 5 minutes. Use a 10 minute natural release and then force the release.
- Combine 2 Tbsp cornstarch with the orange juice and whisk until combined. Set Instant Pot to saute again and add the cornstarch mixture. Allow to simmer for 2-3 minutes, or until the sauce thickens. Allow chicken/sauce to sit for 5-7 minutes after cooking for sauce to continue to thicken.
- Serve with rice and a vegetable.
