Green Enchiladas

Green enchiladas with a Sarah spin.

Ingredients

  • 4 C cooked, shredded chicken
  • 8 oz cream cheese
  • 2 green onions, chopped
  • small handful cilantro, chopped
  • salt and cumin to taste
  • half of a lime, juiced
  • 10 flour tortillas
  • 1 large can green enchilada sauce
  • Cheese of choice

Instructions

  1. Spray a 9x13 pan with nonstick spray and set aside. Put cream cheese in microwave for about 30 seconds, or until softened and easy to stir. Combine cream cheese, chicken green onions, cilantro, salt, cumin, and lime juice. Put a small amount of enchilada sauce in the bottom of the 9X13 pan (enough to cover the bottom of the pan). Fill Tortillas with chicken combination, roll up, and place in pan. Cover rolled tortillas with the rest of the enchilada sauce and top with cheese. Cover with tin foil.

  2. Bake at 350 for 20 minutes. Remove the tin foil and bake 10 more minutes.
