Creamy Tomato Soup

Ingredients

  • 1 Tbsp reserved oil from sun-dried tomatoes or olive oil
  • 1 C chopped onion
  • ¾ C shredded carrot
  • 4 cloves garlic, minced
  • 2/3 C sliced sun-dried tomatoes packed in oil
  • 2 (14.5 oz) cans diced tomatoes, undrained
  • 2 C chicken broth
  • 1 tsp sugar
  • 1 tsp salt
  • ¼ tsp ground pepper
  • ½ tsp dried oregano
  • 1 Tbsp dried basil
  • ½ tsp red pepper flakes, optional
  • 4 oz reduced-fat cream cheese

Instructions

  1. Saute onion, carrot, and garlic in oil over medium heat. When vegetables are tender add sun-dried tomatoes, canned tomatoes, chicken broth, sugar, salt, pepper, oregano, basil, and pepper flakes.
  2. Bring soup to a boil and then reduce heat to simmer. Cover pan and simmer for 30 minutes.
  3. Remove from heat. Add cream cheese. Use immersion blender to process until smooth.
