Creamy Tomato Soup

- 1 Tbsp reserved oil from sun-dried tomatoes or olive oil
- 1 C chopped onion
- ¾ C shredded carrot
- 4 cloves garlic, minced
- 2/3 C sliced sun-dried tomatoes packed in oil
- 2 (14.5 oz) cans diced tomatoes, undrained
- 2 C chicken broth
- 1 tsp sugar
- 1 tsp salt
- ¼ tsp ground pepper
- ½ tsp dried oregano
- 1 Tbsp dried basil
- ½ tsp red pepper flakes, optional
- 4 oz reduced-fat cream cheese
Instructions
- Saute onion, carrot, and garlic in oil over medium heat. When vegetables are tender add sun-dried tomatoes, canned tomatoes, chicken broth, sugar, salt, pepper, oregano, basil, and pepper flakes.
- Bring soup to a boil and then reduce heat to simmer. Cover pan and simmer for 30 minutes.
- Remove from heat. Add cream cheese. Use immersion blender to process until smooth.
