  1. Dip peaches in boiling water for 20-45 seconds, then put in cold water.
  2. Remove skin and slice. Fill jar with peaches to the neck of jar. Add 1/3 – ½ C sugar.
  3. Add water to cover peaches (about to neck).
  4. Heat lids, wipe neck of jar with moist towel, and put lids on jar.
  5. Put jars of peaches in hot water bath (but not boiling). Water should be about 1 inch above jars. Boil for 20-30 minutes.
