Berry Cobbler

Ingredients
- 8 C mixed berries, frozen or fresh
- ¼ C sugar
- 2 Tbsp cornstarch
- 1 tsp lemon juice
- ½ tsp vanilla
Buttermilk Biscuit Topping
- 2 C flour
- ½ C sugar
- 1 ½ tsp baking powder
- ¼ tsp baking soda
- ½ tsp salt
- ½ C butter, cold and cubed
- ½ C buttermilk, cold (Or add 1 tsp of lemon juice or vinegar to a liquid measuring cup, then add enough milk to get ½ C. Stir and let sit for 5 minutes.)
Instructions
- Preheat oven to 350 degrees and grease 9x13 pan.
- Make filling but combining berries, sugar, cornstarch, lemon juice, and vanilla until combined. Spread evenly into prepared pan.
- Make the topping. Whisk flour, sugar, baking powder, baking soda, and salt together. Add butter using a pastry cutter. While stirring flour mixture, slowly drizzle in the buttermilk. Mix evenly until combined. Take handfuls of dough and gently flatten out over the berry mixture.
- Bake for 45-55 minutes, or until golden brown and topping is cooked through.
