Berry Cobbler

Ingredients

  • 8 C mixed berries, frozen or fresh
  • ¼ C sugar
  • 2 Tbsp cornstarch
  • 1 tsp lemon juice
  • ½ tsp vanilla

Buttermilk Biscuit Topping

  • 2 C flour
  • ½ C sugar
  • 1 ½ tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • ½ C butter, cold and cubed
  • ½ C buttermilk, cold (Or add 1 tsp of lemon juice or vinegar to a liquid measuring cup, then add enough milk to get ½ C. Stir and let sit for 5 minutes.)

Instructions

  1. Preheat oven to 350 degrees and grease 9x13 pan.
  2. Make filling but combining berries, sugar, cornstarch, lemon juice, and vanilla until combined. Spread evenly into prepared pan.
  3. Make the topping. Whisk flour, sugar, baking powder, baking soda, and salt together. Add butter using a pastry cutter. While stirring flour mixture, slowly drizzle in the buttermilk. Mix evenly until combined. Take handfuls of dough and gently flatten out over the berry mixture.
  4. Bake for 45-55 minutes, or until golden brown and topping is cooked through.
