Chewy Oatmeal Cookies

Ingredients 1 C margarine ¾ C sugar ¾ C brown sugar 2 eggs 1 ½ C flour 1 tsp baking soda 1 tsp salt 1 tsp water 1 tsp vanilla 2 C oatmeal chocolate chips, raising, or nuts, if desired Instructions Mix and drop on cookie sheet. Bake at 350 degrees for about 11 minutes.

Granola

Ingredients 8 cups oatmeal, quick or regular 6 cups rolled wheat 2 cups coconut 2 cups sunflower seeds 2 cups wheat germ 1 1⁄2 cups brown sugar Glazing 1 cup water 1 cup vegetable oil 1 tsp vanilla 1⁄2 cup honey Instructions Mix together glazing and warm until honey is melted. Pour over rest. Mix well. Bake 200 degrees for about 1 hour. Stir often.

Healthy Peanut Butter Balls

Ingredients 1 C dry oatmeal (or wheat flakes) 1⁄2 C chocolate chips 1⁄2 C peanut butter 1⁄2 C ground flaxseed 1⁄3 C honey 1 tsp vanilla Instructions Mix ingredients together. Roll into balls. Refrigerate to set.

Janice Simmonds' Oatmeal Cookies

Cream together: - 1 cup shortening - 1 cup sugar - 1 cup brown sugar Add: - ¼ cup water - 2 eggs - 1 tsp vanilla Beat together. Add: - 1 ½ cup flour - 1 tsp salt - 1 tsp baking soda Beat together Add: - 4 cups Instant Oats Bake at 350 for 6-8 minutes.

Ranger Cookies

1 C margarine 1 C sugar 1 C brown sugar 2 eggs 1 tsp vanilla 2 C flour 1 tsp baking soda ½ tsp baking powder ½ tsp salt 2 C Wheaties 1 C coconut 1 C chocolate chips, raisins, or nuts 2 C quick oatmeal Instructions Mix and drop by spoonfuls on cookie sheet. Bake at 375 degrees about 10 minutes.

Soft Oatmeal Cookies

Ingredients 2 eggs 2 C applesauce 2 C margarine 4 ½ C flour 3 C brown sugar 1 tsp salt 5 C oatmeal 2 tsp baking soda 1 tsp cloves 4 tsp cinnamon 1 C coconut 1 pkg chocolate chips Instructions Mix as usual. Drop by spoonfuls on cookie sheet. Bake at 400 degrees for about 10 minutes.
