Applesauce Brownies

Ingredients ½ C margarine 2 C sugar 2 tsp vanilla 4 eggs 2⁄3 C applesauce 1 ¼ C flour 3 heaping Tbsp cocoa 1 tsp salt ½ tsp baking powder Instructions Mix and pour into well-oiled pan and bake at 325 degrees for 30-35 minutes. When cool, frost with thin layer of mint frosting. When that is dry frost with chocolate frosting.

Blonde Brownies

Ingredients 1 C brown sugar 1 C white sugar 1 cube butter 2 eggs 2 tsp vanilla 2 C flour 1 tsp baking powder ¼ tsp baking soda 1 tsp salt 1 pkg chocolate chips or raisins Instructions Mix sugars and butter well. Add eggs and vanilla and mix. Mix in flour, baking powder, baking soda, and salt. Stir in chocolate chips. Bake in oiled 9x13 pan for 20-25 minutes at 350 degrees.

Brown Sugar Muffins

Ingredients 2 C flour 1 tsp baking soda ¼ tsp salt 1 C brown sugar ½ C soft butter 1 egg 1 tsp vanilla 1 C milk Instructions Mix dry ingredients in bowl. Make a hole in the middle. Mix remaining ingredients and pour into the hole. Mix until moistened. Drop into oiled muffin pan 2⁄3 full. Bake 400 degrees for 25 minutes.

Caramel Fudge

Ingredients 3 C sugar 1 can evaporated milk ¾ C margarine 1 pkg. chocolate chips 30 caramels 7 oz marshmallow creme 1 tsp vanilla Instructions Boil sugar, evaporated milk, margarine, and chocolate chips 5 minutes, stirring constantly. Add caramels, marshmallow creme, and vanilla. Pour into buttered pan.

Caramels

Ingredients 2 C sugar 1 C Karo syrup ½ lb (2 cubes) margarine 2 C evaporated milk 1 tsp vanilla nuts (if desired) Instructions Bring sugar, Karo syrup, margarine, and 1 C evaporated milk to a boil. Cook on medium heat for 15 minutes, stirring occasionally. Take off heat and slowly add an additional 1 C evaporated milk. Cook to firm ball, stirring constantly. Add vanilla and nuts, if desired.

Cheeseburger Soup

Ingredients 1⁄2 lb hamburger, browned 3⁄4 cup shredded carrots 1 tsp dried basil 3 cups chicken broth 1⁄4 cup flour 1 1⁄2 cup milk pepper 3⁄4 cup onion chopped 3⁄4 cup celery diced 1 tsp dried parsley 4 cups potatoes, diced 8 oz Velveeta cubed 3⁄4 tsp salt 1⁄4 cup sour cream (optional) Instructions Brown beef in 3 quart saucepan; drain and set aside. In the same saucepan saute onion, carrots, celery, basil, and parsley in 1 Tbsp butter until tender (about 10 minutes).

Chewy Oatmeal Cookies

Ingredients 1 C margarine ¾ C sugar ¾ C brown sugar 2 eggs 1 ½ C flour 1 tsp baking soda 1 tsp salt 1 tsp water 1 tsp vanilla 2 C oatmeal chocolate chips, raising, or nuts, if desired Instructions Mix and drop on cookie sheet. Bake at 350 degrees for about 11 minutes.

Chicken and Rice

Ingredients 3⁄4 cup rice, uncooked 3-4 chicken breasts, cut into bite size pieces 2 cups chicken broth 1 Lipton onion soup packet 1 can cream of chicken soup 1 can evaporated milk Instructions Butter a 9x13 inch pan. Sprinkle rice over the bottom of the pan. Lay chicken pieces on rice. Pour chicken broth over rice and chicken. Sprinkle onion soup packet on top. Mix soup and milk and pour on top.

Choco Taffy Chewies

Ingredients 2 cups flour 1 tsp baking soda 1 tsp salt 1⁄2 cup butter 1 cup brown sugar 1⁄2 cup molasses 1 egg 1 tsp vanilla 1 cup rolled oats (wheat flakes) 1 pkg chocolate chips 1 cup coconut Instructions Cream the butter, sugar, molasses, egg and vanilla. Add dry ingredients. Bake at 375 for 10-12 minutes.

Chocolate Coconut Bars

Ingredients 1 C sugar 1⁄3 C margarine 1 1⁄3 C coconut 2 eggs 1 ½ C flour 3 tsp baking powder 1 tsp cinnamon ¾ tsp salt ½ tsp nutmeg 1 pkg chocolate chips Instructions Bake in 9x13 pan about 15 minutes at 375 degrees.

Chocolate Zucchini Cake

Ingredients ½ C margarine ½ C vegetable oil 1 ¾ C sugar 2 eggs 1 tsp vanilla ½ C milk mixed with 1 tsp lemon juice 2 ½ C flour 4 Tbsp cocoa ½ tsp baking powder 1 tsp baking soda ½ tsp cinnamon ½ tsp cloves 2 C diced or shredded zucchini ¼ C chocolate chips for top Instructions Mix and put in oiled 9x13 pan. Sprinkle with the chocolate chips.

Cinnamon Rolls

Ingredients 3 C scalded milk 1 cube melted margarine 2 eggs ¾ C sugar 1 tsp salt 1 C mashed potatoes 3 Tbsp yeast about 7 ½ C flour butter cinnamon sugar raisins, if desired Instructions Combine milk, margarine, eggs, sugar, salt, and potatoes. Cool slightly and add yeast. Mix thoroughly. Raise. Roll, spread with butter, and sprinkle on sugar and cinnamon. Add raisins if desired. Roll up and cut.

Cowboy Beans

Ingredients 1 pound lean ground beef 1⁄2 cup chopped onion 1 green pepper, chopped, or mixture of green and red bell pepper 3 cans beans, drained and rinsed (pinto, great northern, and kidney or your choice) 1⁄2 cup brown sugar 2 tbsp. prepared mustard 2 tbsp. Worcestershire sauce 1 1⁄2 cups ketchup Instructions In a large skillet over medium heat, brown the ground beef with onion and green pepper. Add beef mixture to crockpot with the remaining ingredients.

Danish Dessert

Ingredients 1 box white cake mix 1 (8 oz) pkg cream cheese 1 C powdered sugar ½ C milk 1 pkg Danish dessert fruit Instructions Bake cake mix as per directions in large cookie pan. Cool. Mix cream cheese, powdered sugar, and milk. Spread on cake. Set in freezer for 30 minutes. Prepare Danish dessert as per directions with fruit and spread on top. Chill and serve.

Ginger Snaps

Ingredients ¾ C butter 1 egg 1 C sugar 1 C molasses 3 C flour ½ tsp salt 1 tsp cloves 2 tsp baking soda 1 tsp cinnamon 1 tsp ginger Instructions Mix butter, egg, sugar, and molasses. Add flour, salt, cloves, baking soda, cinnamon, and ginger. Mix well. Form balls. Roll in sugar. Bake at 375 degrees about 10 minutes.

Gingerbread Cookies

requires 3 hours time to chill batter Ingredients 1 C margarine 1 C sugar 1 C molasses 1 egg 1 Tbsp vinegar 5 C flour 1 ½ tsp baking soda ½ tsp salt 1 Tbsp ginger 1 tsp cinnamon 1 tsp cloves Instructions Cream margarine and sugar together. Add molasses, egg, and vinegar and beat well. Add remaining ingredients. Mix well. Chill 3 hours. Roll out and cut.

Granola Bars

Ingredients 1 C brown sugar 1 C Karo syrup 1 C peanut butter 6 C granola or Rice Krispies chocolate chips, if desired Instructions Bring brown sugar and Karo Syrup to a boil. Add peanut butter and granola. Put in a buttered pan. May melt chips on top when still warm. Cut in bars.

Hot Juice

Ingredients 1 can orange juice ½ can lemonade 4 ½ cans water cinnamon, nutmeg, and cloves to taste Instructions Add all ingredients together and heat to desired temperature.

Microwave Divinity

Ingredients 4 C sugar 1 C light corn syrup ¾ C water 3 egg whites 1 tsp vanilla or 1 tsp peppermint and a crushed peppermint stick Instructions Cook sugar, corn syrup, and water in a 2 quart microwave safe container until thick and yellowish (about 14 minutes, depending on your microwave). Beat egg whites until stiff. Slowly pour in the syrup and continue mixing until it gets very stiff (holds its shape) and loses it gloss.

Microwave Peanut Brittle

Ingredients 1 C raw peanuts 1 C sugar ½ C corn syrup 1⁄8 tsp salt 1 Tbsp butter 1 tsp vanilla 1 tsp baking soda Instructions Butter pan in preparation. Stir peanuts, sugar, corn syrup, and salt in a large microwave safe bowl. Microwave on high for 2-3 minutes. Stir. Cook 1-2 minutes more on high. Add butter and return to microwave on high for 2 ½ – 4 or 5 minutes.

Monkey Bread

Ingredients 1 jumbo package or 2 small packages of refrigerated biscuits melted butter cinnamon sugar Instructions Cut biscuits int triangles, dip into melted butter and then into cinnamon sugar. Place in bundt pan and cook at 375 for about 25 minutes.

Olive's Chocolate Chip Cookies

Ingredients 3⁄4 C shortening (or 1⁄2 C butter) 1 C brown sugar 1⁄2 C sugar 1 tsp vanilla 2 eggs 2 1⁄2 C flour 1 tsp baking soda 1 tsp salt 2 C chocolate chips Instructions Bake at 375 for 10-12 minutes.

Olive's Lasagna

Ingredients 1 lb hamburger (or more for larger group) 2 cans tomato sauce 1 package dry spaghetti sauce seasoning lasagna noodles cottage cheese mozzerella/cheddar cheese parsley flakes Instructions Brown hamburger. Add tomato sauce, a little water, and dry spaghetti sauce seasoning. Simmer. Layer hamburger mixture, noodles, cottage cheese, mozzerella and/or cheddar cheese and sprinkle with parsley flakes. Repeat layers 2-3 times, ending with hamburger mixture on top. Cook at 350 until bubbly, about an hour (if topped with cheese, cover while cooking).

Olive's Noodles

Ingredients 2 eggs ½ tsp salt 1 C flour Instructions Beat eggs. Add salt and flour. Knead well. Cover and let stand 30 minutes. Roll out thin. May let dry. Cut in narrow strips. Cook in broth about 10 minutes.

Olive's Rolls

Ingredients 4 C scalded milk 1 cube margarine ½ C sugar 1 Tbsp salt 4 Tbsp yeast 4 eggs About 10 C flour Instructions Scald milk. Add salt, sugar, and margarine to the milk. Cool. Add yeast and eggs. Mix in flour a few cups at a time. Let rise. Shape as desired. Let rise. Bake 12 minutes at 375 degrees.

Orange Pumpkin Bread

Ingredients 2⁄3 C margarine 2 C sugar 4 eggs 2 C pumpkin 2⁄3 C orange juice 2 tsp baking soda 1 tsp salt ½ tsp baking powder 1 tsp cinnamon 3 1⁄3 C flour nuts, raisins, or chocolate chips, if desired Instructions Mix well. Bake in well oiled loaf pans about 45 minutes at 350 degrees. Check with toothpick to see if done.

Peanut Butter Candy

Ingredients 1 C butter 2 C peanut butter 3 C powdered sugar Instructions Mix together and mold into patties or form a roll.

Peanut Butter Chocolate Chip Cookies

¾ C margarine 1 C sugar 1 C brown sugar ½ C peanut butter 2 eggs 2 tsp vanilla 2 ½ C flour 1 tsp baking soda ½ tsp salt 1 pkg chocolate chips Instructions Mix and drop on cookie sheet and bake at 350 degrees for 10-12 minutes.

Peanut Butter Popcorn Balls

Ingredients 1 ½ C sugar 1 ½ C Karo syrup 1 ½ C peanut butter 1 ½ tsp vanilla popcorn (2 poppers) Instructions Mix sugar and syrup. Bring to a full boil. Boil 30 seconds stirring constantly. Remove from heat. Add peanut butter and vanilla. Pour over popped corn. 2 poppers.

Pudding Cake

Ingredients 1 cake mix (and ingredients needed for cake) 2 small packages of instant pudding (and ingredients needed for pudding) 1 cup powdered sugar Instructions Bake cake as directed. While cake is in the oven, prepare 2 small packages of instant pudding as directed, adding 1 cup of powdered sugar. Have pudding ready when cake comes out of the oven. Poke large holes in cake and pour pudding over it.

Pumpkin Cake

Ingredients 1 pkg yellow cake mix 1 small pkg vanilla instant pudding ½ tsp cinnamon ½ tsp cloves ½ tsp ginger ¼ tsp baking soda 1 C water 1 small can pumpkin 2 eggs Instructions Mix all ingredients together and pour in a 9x13 pan. Bake at 350 degrees for 40-45 minutes. Top with: 1 (12 oz) tub cool whip ½ C brown sugar Mix and put on cake.

Pumpkin Cookies

Ingredients ½ C margarine 1 C pumpkin 1 C sugar 2 C flour 2 eggs 1 tsp baking powder 1 tsp baking soda 1 tsp cinnamon 1 tsp vanilla 1 C raisins, chocolate chips, or nuts Instructions Mix and bake at 350 degrees for 10-15 minutes.

Ranger Cookies

1 C margarine 1 C sugar 1 C brown sugar 2 eggs 1 tsp vanilla 2 C flour 1 tsp baking soda ½ tsp baking powder ½ tsp salt 2 C Wheaties 1 C coconut 1 C chocolate chips, raisins, or nuts 2 C quick oatmeal Instructions Mix and drop by spoonfuls on cookie sheet. Bake at 375 degrees about 10 minutes.

Raw Apple Cake

Ingredients 4 C diced apples 2 C sugar ½ C oil 2 eggs 2 tsp vanilla 2 C flour 2 tsp baking soda 2 tsp cinnamon 1 tsp salt Instructions Bake in 9x13 pan at 350 degrees for about 1 hour. Top with caramel sauce: Ingredients 1 C sugar 1 C brown sugar 1 can milk 1 C butter 1 tsp vanilla Instructions Bring to a boil to dissolve sugars.

See's Fudge

Ingredients 4 ½ C sugar 1 can evaporated milk 1 ½ pkg chocolate chips (3 C), can also use peanut butter or butterscotch 1 pint marshmallow creme handful of marshmallows 1 C butter (no substitutions) 2 tsp vanilla nuts or crushed peppermint, as desired Instructions Stir and boil sugar and evaporated milk 10 minutes. Combine all other ingredients except vanilla and nuts in a separate bowl. Pour sugar mixture over these ingredients and mix well.

Soda Cracker Candy

Ingredients oil saltine crackers 1 C butter 1 C brown sugar chocolate chips Instructions Preheat oven to 350 degrees. Line cookie sheet with foil and oil well. Line with whole saltine crackers. Boil butter and brown sugar for 2 minutes, stirring constantly. Pour sugar mixture over crackers by spoonful. Bake for 5 minutes. Sprinkle with chocolate chips. When melted, spread and sprinkle with chopped nuts, if desired. Cool 20 minutes before cutting.

Sweet and Sour Chicken

Ingredients 1 lb chicken (cut into bite size pieces) 1 medium onion, chopped finely 2 carrots, sliced green/red bell peppers, chopped 2 cans (8 oz) undrained pineapple chunks ¼ C white vinegar 3 Tbsp brown sugar 3 Tbsp ketchup 3 Tbsp soy sauce 3 Tbsp corn starch 2 tsp ginger Instructions Brown chicken. Add onions and carrots, and peppers and cook on low for 10 minutes, stirring frequently. Add remaining ingredients, cover, and cook 10 more minutes (may have to add a little water).

Taco Ring

Taco Ring ½ lb ground beef, cooked and drained 1 pkg taco seasoning mix 1 C shredded cheddar cheese 2 Tbsp water 2 pkgs refrigerated crescent roll dough toppings (green pepper, lettuce, tomato, onion, black olives, salsa, sour cream, etc.) Ingredients Brown and drain meat. Add seasoning, cheese, and water. Preheat oven to 375 degrees. Arrange crescent triangles into a circle with points outward. Scoop meat into crescent rolls, then fold points over the meat and tuck under the base.

Zucchini Bread

Ingredients 2 C sugar 3 eggs 2 C grated zucchini 3 tsp vanilla ½ tsp baking powder ½ tsp cloves 1 C oil or margarine 3 C flour 1 tsp salt 1 tsp baking soda 3 tsp cinnamon ½ tsp nutmeg nuts, chocolate chips, or raisins as desired Instructions Mix well. Bake in well oiled loaf pans at 350 degrees for about 1 hour.
