Jeff's Turkey Leg Brine

Soak that bird.

Ingredients

  • 1 gallon water
  • 1 cup kosher salt
  • 3/4 cup lightly packed light brown sugar
  • 2 Tbsp garlic powder
  • 2 Tbsp onion powder
  • 2 Tbsp red pepper flakes
  • 2 Tbsp Cajun seasoning
  • 2 Tbsp Tabasco sauce
  • 1 Tbsp poultry seasoning

Instructions

  1. Bring water in large stockpot on medium-high heat
  2. Add the salt and stir until it is dissolved completely and the water is clear
  3. Add remaining ingredients and bring water to slow boil.
  4. Let brine simmer for 15 minutes
  5. Remove from heat and set aside to cool to room temperature
  6. Once cooled, refrigerate and cool to at least 39°F
