Top Sirloin much like Rodizio
Ingredients
- 3 lb top sirloin with fat cap
 - course grain salt
 - garlic powder
 
Instructions
- Cut top sirloin into 1 inch steaks, cutting with the grain
 - Bend steaks into crescent shape and skewer, with fat cap on outside perimeter
 - Smoke at 225 F for 1 hour
 - Increase heat to 375 F and cook 5 minutes on each side
