Smoked Whole Turkey

A great recipe for the big day.

Ingredients

Wood

  • plum, apple, or mesquite

Instructions

  1. Brine turkey (optional)
  2. Apply All Purpose Rub on the outside and under the skin (use less salt if brined)
  3. Place a few pats of butter under the skin
  4. Place some herbs under the skin (rosemary, thyme, sage)
  5. Leave turkey on counter while prepping smoker
  6. Preheat smoker to 225°F
  7. Cook until thermometer in breast reads 185-190°F
  8. Remove turkey from smoker and allow it to rest for 30 minutes before carving

Notes

  • 7 hours for 22lbs
  • for brine, use 1/4 cup salt for 1 quart water
