Pumpkin Roll

Tasty fall treat.

Ingredients

  • 3 eggs
  • 1 cup sugar
  • 2/3 cup pumpkin
  • 1 t baking powder
  • 2 t cinnamon
  • 1/2 t salt
  • 1 t lemon juice
  • 1 t ginger
  • 3/4 cup flour
  • 1/2 t nutmeg

Instructions

  1. Beat eggs for 5 min on high.
  2. Beat sugar in gradually.
  3. Stir in pumpkin.
  4. Spread on parchment 15x10" pan
  5. Bake @ 375 for 15 min
  6. Turn out on towel and sprinkle with powdered sugar.
  7. Roll while warm.

Filling Ingredients

  • 1 cup powdered sugar
  • 6 oz cream cheese
  • 4 T butter
  • 1/2 t vanilla

Filling Instructions

  1. Beat and spread on roll.
  2. Reroll and chill.
