Penne Rosa

Knock off of Noodles & Company.

Ingredients

  • 1 (16 oz) box of penne noodles
  • 2 cooked chicken breasts, cut into pieces
  • 1 (14 ½ ounce) can Italian-style diced tomatoes (drained)
  • 2 (16 oz) jars light Alfredo sauce
  • 1 (8 oz) can tomato sauce
  • chopped spinach, to taste
  • red pepper flakes, to taste
  • Parmesan cheese (optional)

Instructions

  1. Cook chicken breasts and penne noodles.
  2. While noodles and chicken are cooking, mix Alfredo sauce, tomatoes, tomato sauce, spinach, and pepper flakes.
  3. Simmer on low for 15-20 minutes.
  4. Combine chicken, noodles, and sauce and stir.
  5. Serve immediately and sprinkle with Parmesan cheese.
