Microwave Divinity

Divinity from the microwave of Olive Harwood.

Ingredients

• 4 C sugar
• 1 C light corn syrup
• ¾ C water
• 3 egg whites
• 1 tsp vanilla or 1 tsp peppermint and a crushed peppermint stick

Instructions

1. Cook sugar, corn syrup, and water in a 2 quart microwave safe container until thick and yellowish (about 14 minutes, depending on your microwave).
2. Beat egg whites until stiff.
3. Slowly pour in the syrup and continue mixing until it gets very stiff (holds its shape) and loses it gloss.
4. Add vanilla or peppermint.
5. Spoon out onto waxed paper.
