Honey Bourbon Crock Pot Chicken

Chicken in a sweet sauce.

Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1/2 Cup diced onion
  • 1 Cup honey
  • 1/2 Cup low sodium soy sauce
  • 1/4 Cup ketchup
  • 2 Tbsp canola or olive oil
  • 2 cloves garlic, minced
  • 1/4 tsp red pepper flakes
  • 1-2 Tbsp cornstarch
  • hot rice
  • sesame seeds (optional)

Instructions

  1. Place chicken in slow cooker. Place onion on top of chicken.
  2. In a medium sized bowl combine honey, soy sauce, ketchup, oil, garlic, and red pepper flakes. Pour mix-ture over the chicken in the slow cooker.
  3. Cook on low for 3-4 hours.
  4. Remove chicken from crock pot and slice into strips.
  5. In a small bowl, combine 1 Tbsp cornstarch with 1 Tbsp water. Pour into sauce remaining in the slow cooker and stir to combine. If sauce isn’t thick enough, repeat with another Tbsp of the corn-starch/water.
  6. Place chicken back in the sauce and stir around to re-coat the chicken in the sauce.
  7. Serve over cooked rice and sprinkle with sesame seeds, if desired.
