Flaky Pie Pastry

The foundation for pies.

Ingredients

  • 2 2/3 cup flour
  • 2 Tbsp sugar
  • ½ tsp salt
  • ¾ cup cold butter, cut in ½ inch square pieces
  • ¼ cup vegetable shortening, cut in 4 pieces
  • 5-6 Tbsp ice water

Instructions

  1. Combine flour, sugar, and salt.
  2. Using a pastry blender, cut in the butter and shortening until the mixture resembles coarse meal.
  3. Drizzle 5 Tbsp ice water over the top, tossing the mixture with a fork until the dough just comes together. If necessary, add up to 1 Tbsp more water.
  4. Divide the dough in half and shape each half into a disk. Wrap in plastic and refrigerate for at least 30 minutes, or overnight.
