Cherry Smoked Prime Rib

Prime rib in the smoker.

Ingredients

  • 5 lb prime rib
  • 2 Tbsp kosher salt
  • 2 Tbsp coarsely ground black pepper
  • 2 Tbsp garlic flakes
  • 2 Tbsp minced onion
  • 1 Tbsp red pepper flakes
  • Spray olive oil
  • 2 cups cherry juice

Instructions

  1. Use butcher twine to tie up the prime rib at 3/4 inch intervals
  2. Mix the salt, pepper, garlic flakes, onion, and red pepper flakes to form a rub
  3. Spray olive oil on the meat, then sprinkle on the rub
  4. Leave prime rib on counter for 30-45 minutes
  5. Preheat smoker to 225°F-240°F
  6. Place prime rib in smoker
  7. Spray prime rib with cherry juice every hour
  8. Insert a thermometer probe into thickest part of the meat at about 2 hour mark
  9. Cook to medium-rare (130°F)
  10. Remove prime rib from smoker and place in pan with foil tented over top until time to eat
